Martellato Frank Haasnoot Chocolate-Decoration Stencil Template, Heavy Duty Stainless Steel Note: "High" in the title means overall height (top to bottom) of the tool, NOT height of design For forming pieces of chocolate that start off as rectangles matching the overall size of the template Design etched through the template lets you draw a pattern through the chocolate rectangle You then have two identical decorative pieces of chocolate that you pull apart Tool made of 1 piece of stainless steel -- no welding Thickness of tool -- all around -- 1/8 inch Solid and hefty, weighing a full pound To Use: Pour your chocolate onto a food-safe sheet of plastic ("guitar" sheet) -- either a blank one or one with decoration to transfer to the chocolate ("chocolate transfer sheet") and spread the chocolate over the sheet. Place the template on the chocolate, cutting off the chocolate that sticks out past the template. Move a thin tool (not included with the template) through the engraved design of the template in one continuous motion. Invert the guitar sheet with the etched-out-pattern chocolate, placing it back on your work surface and peeling off the guitar sheet. Separate the two identical pieces of chocolate (done in Martellato's video by tucking a knife under one side of the chocolate and lifting up the knife; the two identical pieces of chocolate are now disconnected).
